Ora abbiamo quattro ristoranti, il primo l’abbiamo aperto a Cannaregio cinque anni fa e l’ultimo che abbiamo aperto è Africa Experience. In tutto lavoriamo in dieci. Siamo tutti afghani, io di Kabul, più una socia italiana, Sara. Tante persone non conoscevano questo modo di mangiare e per loro era un problema, ma ora che lo conoscono a loro piace, soprattutto ai giovani. Il modo in cui lavoriamo noi è unico, nessuno lavora così a Venezia. Secondo me è anche un modo per promuovere l’integrazione. Io ho girato tanti paesi, Iran, Pakistan, Grecia…sono rimasto lì qualche anno e ho imparato a cucinare alcuni piatti. Adesso cucino solo io, e porto nel menù le mie esperienze personali e quelle di tutti i nostri soci. L’importante è che i nostri molti clienti da noi facciano un’esperienza.

We have four restaurants now, we opened the first one in Cannaregio five years ago and the last one we’ve opened is Africa Experience. It’s ten of us working, in all. We’re all Afghan, I’m from Kabul, plus an Italian associate, Sara. Many people didn’t know this way of eating and to them this was a problem, but, now that they know it, they like it, especially young people. The way we work is unique, nobody works like this in Venice. I think it’s also a way to enhance integration. I’ve travelled many countries, Iran, Pakistan, Greece… I’ve stayed there for a few years and I’ve learnt how to prepare some dishes. Now I’m the only one cooking, and I try to convey in the menu my personal experiences and those of all our associates. The important thing is that our many customers undergo an experience here.
